Curry Laksa

This is my mother in law recipe. Last weekend my wife dished out this dish and it was a very fulfilling day for me and my two kids. Thanks to my wife. The laksa taste delicious. Chicken and tau foo pok was added into the coconut milk flavoured curry. We has a choice of mee or meehoon. It was simple but nice. I will post the recipe on the blog once I get it from my wife.

Malaysian Fried Kway Teow

Ingredients for 2 person

600gms kway teow
Chopped garlic
3tbsp Cooking oil
300gms prawns, shelled but leave tails intact
1 chinese sausage (optional) sliced thinly
150gms cockles. Scalded and shelled (Optional)
150gms bean sprouts
100gms chives cur into 3cm lengths
Chilli paste (depends on taste)
2 Eggs

Seasoning
1tbsp light soya sauce
Salt and pepper to taste
1tbsp chilli paste
1 little dark soya sauce – for colour
A little water

Method ( This method is for 1 plate of kway teow)

Heat 3tbsp oil cooking oil and fry 1tbsp chopped garlic until brown.Add in 3 to 4 pieces prawns ,some beansprouts and a few slices of chinese sausages.
Push the ingredients to one side and add in a plate of kway teow.
Stir fry the kway teow quickly.
Add seasoning and a little of water and mix in all the fried ingredients.
Spread the ingredients around the wok and creat an empty space in the centre.
Add a bit of oil and crack an egg into the centre empty space.
Cover the egg with all the ingredients and stir fry evenly.
Add cockles if desired and mix in a handful of chives. Do not overcook.
Serve hot with red chillies.
