This is a traditional dish that most nyonya know how to cook. It is a must serve dish for the Chinese New Year. It is not that difficult to cook if you get the recipe right. Below is my wife's recipe and I hope you will enjoy cooking and your family members will enjoy eating.
Ingredients:
600g chicken
1 tablespoon cooking oil
4 medium size potatos
100g sliced shallots
1 tablespoon chopped garlic
2 tablespoon taucheo paste(fermented soya beans)
1 tablespoon dark soy sauce
2 tablespoon sugar
1 litre water
Method
Cut chicken into serving size
Peel potato and cut each potato into 4 cubes.
Heat oil in a wok and add in sliced shallots and garlic. Fry until light brown. Add in taucheo paste and fry for 1 minute.
Add the chicken, potato, dark soy sauce, sugar, and water. Cover and bring to boil. Reduce heat and simmer for about 1 1/2 hour until meat and potato is tender and soft. Serve and enjoy.
